Juicy beef meat cooked in maguey leaves (from the tequila plant) to give the barbacoa that traditional flavor, slightly shredded to ease the preparation of the tacos. In Mexico this dish is traditionally cooked slowly overnight, under the ground, wrapped in maguey leaves to enhance it’s taste and texture.
